Blanched Cauliflower and Apple Salad
I'm upping my salad game. I've tried to make a salad that's got a wonderful crunchy texture and delicious flavours. This one has crunchy cauliflower, sweet apple, peppery radish, salty parmesan and sour lemon juice. And it's nutritionally dense and filling.

- Mandolin
- Dish for Blanching
- Microplane
- Kettle
Ingredients
- 1/2 Head of Cauliflower
- 1/2 Cucumber
- 1 Apple
- 3 Radishes
- 1 Beetroot
- Parmesan Cheese
- Lemon Juice
- Fresh Oregano
- Salt
- Pepper
Method
Tear Cauliflower into bite-sized chunks and move to a blanching dish.
Boil a kettle-full of water, or around a litre and pour over the cauliflower.
Roughly chop the cucumber into bite size chunks and the apple and beetroot into slivers.
Drain Cauliflower, mix with all the other vegetables.
Salt and Pepper, and toss again.
Sprinkle with lemon juice and dust with microplaned parmesan cheese over the top!
