Vegetarian Baked Cous Cous
Super simple baked cous cous version 2: Vegetarian Mode. This guy is a work-over with a vegetarian twist, making it suitable for snacks, side dishes, lunch, or just straight out dinner if you're that way inclined. The idea of baked cous cous was explored in the last recipe, it's mostly the same here, with the exception of the vegetables. Recipe continues below. Ingredients 1/2 Head of Cauliflower, torn into small pieces 4 Medium Red Sweet Potato, diced 3 Medium Courgettes, ha

Stuffed Sous Vide Chicken, Baked Cous Cous
I've been sitting on this on for a while. I don't know why I hung on to it for so long, because it was delicious. Maybe it was because I took the photo on my phone, or because we ate the meal in a hurry, but it didn't deserve to be left in the dust. This was delicious, lean and packed full of flavour. Let's dig in. Ingredients 3 Chicken Breast Fillets 1 Courgette, juilenned 9 Sundried Tomatoes, finely sliced 3 Red Onions, finely sliced Half a Bulb of garlic, peeled and minced

Green Beef Stew
It's getting into Autumn. It's time to start changing up the cooking to suit the time of year. Too often I come to the party late after having spent too much money trying to hang on to summer cuisine. I've made hay while the sunshines and now, here, we have stew time. This one is a lighter start to the season. Lots of greens, good fiber, deep taste. It's delicious. Ingredients 600g Beef Brisket, diced
2 Brown Onions, roughly chopped
6 Juniper Berries, crushed
6 Cloves of G

Cajun Chicken, Black Bean Parpadelle
I had some leftover black bean pasta in the freezer from a few days earlier and decided to really make the most of it. I took the black beans home, cajun chicken with an okra, mushroom and tomato ragu. Try this dish. It can be done with a basic pasta recipe, or if you're willing, substitute some of the flour for blended black beans. It'll give it a deeper flavour. More in the recipe below. Ingredients For the Chicken 600g Chicken Tenderloins or Chicken Thighs 1 Length of Turm

Satay Chicken Pad Thai
I'm gonna come out with it: I don't like Pad Thai. Especially not the stuff in New Zealand. Traditionally, I've found it to be stodgy, heavy. So if you feel like that, I come bearing gifts of punchy flavour and filling portion sizes, leaving you with a clean-tasting palette. Ingredients 5 Chicken Thighs 200g Roasted Peanuts Pad Thai Rice Noodles 1 Head of Broccoli, florets separated and quartered. 2 Courgettes, thinly sliced 3 Carrots, peeled, 1 thinly sliced, 2 juilienned 40

Golden Beetroot Salad
Salads with colour, texture, flavour, sweetness with a bite of acid, hot contrasting with cold. That's what this salad is. I can't even remember what I was thinking when I made it. But it just came together nicely. The components are: sweet and sour pickled golden beetroot, roasted mushrooms, slow roasted sweet potato, sun-dried tomato hummus, mixed cherry tomatoes, finely sliced red onion and capsicum, fresh oregano and flat leaf parsley. Ingredients - 1 Golden Beetroot - 10

Creamy Buttermilk Borscht
I've got a university major in History. On the path to that history major, some of the things I know by heart are the munich putsch, the timeline of the French Revolution and the fact that Borscht is eaten in Eastern Europe. One caveat however, was that I'd never actually tried it. The recipe below, is my first attempt. Ingredients 4 Beetroot, peeled and diced 8 Potatoes, peeled and diced 3 Red Onions, peeled and finely sliced 1/2 Red Cabbage, finely sliced 300ml Cultured But

Pulled Brisket and Crispy Potatoes
Simple is so good sometimes. It's very hard to go wrong with good old Meat and Potatoes. This beautiful arrangement came from needing to reset. Do you ever get those moments when you go so caught up in details and complications that you can't see the forest for the trees? This is what happens when you step back. Ingredients 1 kg Medium Agria Potatoes 1kg Boned Beef Brisket 2 Sprigs of Rosemary Dried Sage (or fresh) Dried Oregano (or fresh) Dried Marjoram (or fresh) 3 Brown On

Fish and Thai Apple Salad
Thailand changed stuff up. I would never usually go out on a limb with Thai food. Something about South East Asian cuisine is so situated, so already perfect, that I'm scared of screwing it up. But I went out and tried it. It was delicious. So now, I'm passing it forward. Here it goes. Ingredients (for 4) 4 Fillets of Terakihi 3 Bunches of Baby Bok Choy, frilly leaves removed and torn into chunks and stalks finely chopped 1 Bunch of Fresh Coriander 3 Thai Chillies, finely dic

Herb-laced Pizza Dough Recipe
PIZZA! The dough always yeild so much. I made enough for eight pizzas. WORTH IT. I like to jazz up my pizzas with a few herbs and spices. Ensures each bite is delicious down to the last bite. It's a pretty simple recipe and can be adapted easily depending on what range of toppings you have.
