Blood Orange and Chia Seed Posset

I've never been great with desserts. I'm not exactly trigger-happy with sugar, so the fight is always to make something sweet/flavoursome enough without under-doing it. Hence, this: the blood orange and chia seed posset.

Ingredients

200ml Double Cream

2 Tablespoons Chia Seeds

2 Blood Oranges, Halved

2 Tablespoons of Caster Sugar

4 Shortbread biscuits, crushed

1 Tablespoon of softened butter

Method

Pour 200ml Double Cream into a saucepan, add the blood oranges and sugar turn to the lowest heat. Stir, and gently massage the juice and flavour out of the oranges with a wooden spoon. Once the cream begins to bubble gently and the sugar is dissolved, add the chia seeds and stir through. Strain the mixture through a colander and pour the mixture through it to strain out the oranges.

Thoroughly mix the shortbread with the softened butter, then split the mixture in two.

In two serving glasses, press the shortbread mixture into the bottom. Pour equal measures of the cream mixture over top in each glass. Refrigerate for 1-2 hours or until ready to eat.
