Really Loaded Fries
Beans! Meat! Protein overload. This is a gorgeous array of crispy chips, potato and sweet potato. On top, a delightful, earthy mixture of meat, Italian grown black eye peas and tomato, laced with heavy hits of garlic, onion and rosemary. Delicious! Recipe follows!
Ingredients
500g Beef Mince
250g Black Eyed Peas
800g Tinned Italian Tomatoes
2 Tablespoons of Tomato Paste
3 Tablespoons Red Wine Vinegar
1 Bulb of Garlic, peeled and minced
2 Onions, peeled and minced
500ml Beef Stock
3 Sprigs of Rosemary
2 Teaspoons of Dried Oregano
Salt
Pepper
Olive oil
For the chips
Butter or Ghee
800g Potatoes, chipped
800g Sweet Potatoes, chipped
Salt
Pepper
Pickles, Sauerkraut, Cheese to serve
Method
The day before, in a large stock pot cover the peas with water and soak overnight.
The day of the cooking, about an hour before you want to eat, brown the mince in a generous lug of olive oil with the onions and garlic. Once brown and softing, add the tomato paste, rosemary and oregano. Stir through, then add the tomatoes, beef stock and red wine vinegar. Drain the beans from the other pot, then add them to the mince. Simmer and reduce.
For the chips, super easy. Batch blanch the potatoes for 2 and a half minutes and the sweet potatoes for one and a half minutes. Allow to cool, then batch fry on a medium heat in a couple of tablespoons of butter until crispy and brown all over.
Make sure the sauce is nice and thick and the beans are cooked. Salt and pepper well to taste. Take a generous bowlfull of fries, add the beans and sauce on top. Serve with pickles, sauerkraut, cheese or whatever you think will go well.
