Parmesan and Apple Crumble

You might have heard about the huge block of parmesan cheese I've got. It is now no longer. But in it's dying moments, it nobly gave the last of itself to make a delicious sweet crumble with honey, apple and oats. Recipe for one, follows.

Ingredients

3 Medium Sized Granny Smith Apples, Diced

1/2 Cup of Rolled Oats

1/2 Cup Wheat Flakes

1/3 Cup of Flour

25g Salted Butter

1/3 Cup Fresh Grated Parmesan Cheese plus extra for sprinkling!

2 Tablespoons of Clear Honey

Fresh Basil

Blueberries

 

Method

Put the diced granny smith apples in a pot and just cover with water. Turn to the high heat, cover, and cook until the apples are tender and falling apart. (about 25 minutes, depending on the texture of apple). Uncover when tender, and cook until they're thick and sticky, and there are no thin juices. Set aside.

In a mixing bowl, rub the butter into the flour and oats until you've got a dough. Then add most of the cheese, and all of the honey (more if you want it a little more sweet), and the wheat flakes. Form it into a big ball.

Put the ball into a cold frying pan, then flatten it out. shape it into a biscuit of whatever shape you want, but about a centimetre thick. Turn the heat on and gently fry it , about 5 minutes a side on a medium low heat.

Flip it gently, cook on the other side. Once cooked and nicely browned on each side. Transfer to a plate. Adorn the biscuit with apple, blueberries, more cheese, and a few basil leaves. The taste of the basil dances over the other flavours gloriously.
