Creamy Leek, Walnut and Sage Spaghetti

To start off Italian Week here at CasterAzucar.com I thought I'd start of something delicious and delightfully simple! I made homemade spaghetti with caramelized leek and sage. Stirred through with some delicious creamy mascarpone. Adorned with walnuts, this is the perfect way to start the week.

Ingredients

2 Servings of Fresh Spaghetti

1 Leek, finely sliced

1 Onion, peeled and finely sliced

2 Cloves of Garlic, peeled and minced

6 Mushrooms,

1/2 a Courgette, cut into three and then sliced into ribbons

2 Teaspoons of Dried Sage

1 Tablespoon Marscarpone

1 Handful of Crushed Walnuts

Salt

Pepper

Olive Oil

Squeeze of Lemon Juice

 

Method

Pour a generous lug of olive oil into a non-stick frying pan (or stainless steel). Saute the onion and garlic until soft then add the leek, mushrooms and courgette. Saute on a medium heat until soft and caramelizing. Add the mascarpone and stir through until it coats everything in a thick, cheesy sauce.

Bring a pot of well salted water to rolling boil. Boil the pasta until al dente. Strain and add to the caramelized leek. Stir through, salt and pepper to taste.

Serve adorned with walnuts and drizzled with olive oil and lemon.
