Beef Bacon and Kimchi Burger

My mate Thomas came over for lunch one afternoon to give my burgers a go. I made a couple of them, one with prawns and mango, and this one: Homemade Brioche Bun, Beef, Bacon, Mozarella, Quick version Homemade Kimchi, Red Onion, Homemade 21 Chilli Hot Sauce, and of course, Kewpie Mayonnaise. It was the best of times. He even took one home. Now, Thomas, if you can be bothered, here is the recipe. But don't worry, we aren't going to muck around with the bun. Just buy some fluffy, buttery brioche burger buns.

Ingredients (Makes 4)

4 Brioche Burger Buns

1kg Prime Beef Mince

1 Bulb of Garlic, Peeled and Minced

2 Eggs

2 Red Onions, 1 peeled and finely sliced, the other cut into thin rings

Half a Hed Red Cabbage, finely sliced

2 Inches of Fresh Ginger, grated

1/4 Cup Lemon Juice

2 Tablespoons Rice Wine Vinegar

3 Thai Chilies, finely sliced

12 Rashers of Streaky Bacon

150g Grated Mozarella

Salt

Pepper

Olive Oil

 

Method

Preheat the oven to 190 C.

In a large mixing bowl, mix together the mince, garlic and eggs. Add 3 teaspoons of ground or cracked black pepper and two tablespoons of olive oil. Combine well.

Form the mixture into a cylindrical shape, just wider that the diameter of the buns you purchased. Then, wrap the beef patty mixture tightly in cling wrap. Refrigerate for thirty minutes. This will help bind the patty mixture.

In a pot, put the sliced onion, cabbage, ginger, lemon juice and chilli, along with a drizzle of olive oil. Saute on a medium heat until soft. Add salt and pepper to taste.

Take the patty roll from the fridge. Cling wrap on, cut it in half, then each half again. These are your four, glorious patties. Take the cling wrap off the patties. Salt and pepper each side really well and pat it in.

In a frying pan, start frying your patties on a high heat. Flip every minute for 8 minutes. In the final minute, sprinkle with cheese. Let the cheese melt in. I usually cover it with a metal bowl - makes a mini oven that'll melt the cheese nicely!

I roast the bacon on a wire rack in the oven until crispy.

Assemble the burger, as above. I go hot sauce on the bottom, onion rings, burger patty, bacon, kimchi, mayonnaise.
