Prawn Halloumi Avocado Toast

Make breakfast awesome. Make it a spicy morning rockstar. This breakfast number should do the trick. And it's fast - just the way I like it in the morning. Crunchy toast, with a layer of avocado, red onion, followed by fried halloumi, prawns grilled in olive oil, garlic and chilli, sprinkled with a few little oregano leaves. Now THAT's breakfast.

Ingredients

1 Avocado

2 Slices of Toast Bread

4 Slices of Halloumi

6 Prawns

1/4 Red Onion, Finely sliced

2 Cloves of Garlic, finely mince

1 Jalapeño Chilli, deseeded and sliced

Lemon for Squeezing

Olive Oil

Pepper

Fresh Oregano

 

Method

Two non-stick/cast-iron frying pans on a medium high heat with a bit of olive oil. Take the halloumi, fry it up in one frying pan, until golden brown on each side.

In the other frying pan, fry the prawns with garlic and chilli until cooked through.

Put your toast on. Once done, smash or chop some avocado onto it with a sharp knife. Follow it up with some red onion, the halloumi, prawns, a spritzing of fresh lemon juice, followed by a quick grind of pepper.

Serve immediately. Hell yes.
