Behemoth Prawn Burger

I wanted a burger that I'd not tried before. Prawns. A prawn patty with courgette, coriander and paprika. Add an apple and savoy cabbage, hot sauce, mayonnaise and grilled banana... then you've got a burger worth drooling over.

Ingredients (makes five)

5 Brioche Burger Buns

1 Crunchy Apple, julienned

1/4 Savoy Cabbage, finely sliced

Two Tablespoons of Lemon juice

2 Bananas

Salt

Pepper

Olive oil

For the Patties

- 2 Courgettes, grated

- 300g prawn meat

- Two Tablespoons White Flour

- 1/2 teaspoon of Baking Powder

- 3 Cloves of Garlic, minced

- 1 Chilli, minced

- 1/4 cup lime juice

- 2 Eggs

- 10 Stalks of Fresh Coriander, Minced

- 2 Teaspoons Paprika

- 1 teaspoon Salt

- 1 teaspoon ground black Pepper

- 15g Melted butter

Method

Start with the patty mixture. The best way to do this is to mix the courgette, prawn meat, garlic, chilli, lime juice, coriander, paprika, salt, pepper and butter. Sift in the flour and baking powder a little bit at a time, mixing intermittently and thoroughly. Crack in the eggs and pour in the lime juice, mix together thoroughly. The mixture should be thick, but not so thick that it can't hold it's shape.

Prepare the salad. Mix the apple and the cabbage together. Toss in lemon juice, salt, pepper and olive oil.

Slice the banana lengthways into slices. Fry in butter until soft and brown on each side.

Make the fritter by scooping about a ladle full of the mixture into a buttered or oiled non-stick or cast Iron pan. Cook on each side for 5 minutes until brown on each side and cooked all the way through.

Compile burger with toasted bun heel, patty, banana, salad, hot sauce and mayonnaise, toasted bun lid.

Salt and pepper a touch more and...
