High Protein Muesli with Candied Fruit and Condensed Coconut Milk

I went a bit crazy with this one. But it was delicious and absolutely something you should try. I've used High Protein Muesli to bring it back to the side of the force (i.e not the dark side, luke) but it only just makes it over the line. TREAT YO' SELF. It's really simple though. See below.

Ingredients

1 Cup of Muesli

2 Cans of Coconut Milk

2 Plums

1 Apricot

Any other fruit you want

1 Cup of Sugar

1 lime

Method

In a saucepan pour in your coconut milk and on a medium heat, reduce slowly while you do the next step.

Cut your fruit up - with the apricot cut it into rings, as in the photo. This will mean separating it down it's seam and cutting them about 3mm thick. Grease some wax paper and lay out the rings.

In another saucepan, put one cup of sugar and one tablespoon of water. On a low heat, melt the sugar until it is translucent. Increase the temperature to medium to high. Swirl in the saucepan to keep it moving. Eventually, it'll turn a caramel/amber colour. Once its there and beginning to smell like caramel, pour the caramelized sugar over the rings, filling up the hole in the middle. Leave to set.

The hot coconut milk should be reduced by just over half- thick and creamy, almost syrupy. You probably won't need the whole lot, so refrigerate it and heat it up later.

Serve with a pile of muesli, the candied apricot, fruit and a squeeze of lime
