Pea, Mint and Ricotta Mash

Side dishes can make or break a meal - you need a spoonful this or that, not to round it out, but perhaps to cap it off. In this case, my pea, mint and ricotta mash really fits the bill. It's creamy, tangs and pangs of salt and pepper and drizzled with flaxseed oil. Perfect little addition to loads of dishes, or just a nice little side dish.

Ingredients

1kg Peas (frozen is fine)

250g Ricotta

1 Handful Mint Leaves

Flaxseed Oil

Sea Salt Flakes

High Quality Pepper

Lemon Juice (optional)

Method

Steam the peas until piping hot. With half a cup of water, blend three quarters of the peas and the mint leaves until smooth (might need a bit of encouragement). Once done, mix with the remaining peas.

 

Stir through the ricotta until well mixed. Add sea salt flakes to the mash, and stir them in - make sure they're flakes and not rock salt - you don't want a crunchy surprise! But the sea salt flakes are tender, but don't dissolve completely, giving you a nice little pop. 

 

Drizzle each serving with a little bit of flaxseed oil and some pepper. If you've got a bit of ricotta and some mint leaves left over, present it as above; it looks nice!
