Delicious Dairy-Free Bircher Muesli

Another colab with the High Protein Breakfast Company. This one goes out to those who can't handle dairy. And those who can. This muesli goes with everything, I've found. If you're international and can't get a hold of some of this delicious muesli, substitute it with your own mixture of grains, seeds and oats for a breakfast with dynamic texture. This bircher has been made with coconut water and coconut yoghurt. Depending on your nutritional needs, you can rock with sweetened or unsweetened. I made it with unsweetened, but don't let that stop you from experimenting!

Ingredients (for 1 serving)

- 1/2 cup High Protein Breakfast Muesli or other mixture of your choice (perhaps, quick oats, linseeds, sunflower seeds almonds, desiccated coconut, chia seeds)

- 1/2 Cup Coconut Water (3/4 Cup for those who use oat-based blends)

- 1/2 Cup of Coconut Yoghurt (unsweetened or sweetened)

- A handful of your choice of berries or fresh fruit

- 5-6 Raw Macadamias

Method

Overnight, soak your Muesli or own blend in the coconut water. Make sure it is mixed in well.

In the morning, it will have absorbed a lot of the coconut water, some of it will have softened.

Stir through the coconut yoghurt, well. This will loosen it up a bit, and give you a wet, stodgy consistency: I.e perfect. If If it's too stiff, add more yoghurt. If its too loose- add some oats or chia seeds- both will work to congeal the mixture.

Adorn with blueberries and broken macadamias to serve.
